Starting when my boys were only a couple of years old, every year I’ve had them make presents for all their Aunts, Uncles and Grandparents.

They knew too well the joy of receiving but I have always wanted them to know the joy of giving. Each year they would rely on me to come up with the project, gather the supplies and organize a craft day. Last year I shared 4 of their homemade gifts…

Once they reached college, they were on their own. This apple salsa was actually one of the gifts my oldest son came up with while he was in college.  I remember the day he came home from school with a sack of apples, onions and walnuts and proceeded to chop away.  Since he has 12 aunts and uncles, he had a lot of chopping to do.

I have to admit, the final product was delicious…my job as craft coordinator had come to an end.

For one recipe (I doubled mine) start with 2 tart apples, peeled, cored and diced. In a large bowl, stir the apples together with 4 tablespoons lime juice.

Add one fresh jalapeno pepper, seeded and diced,

1/2 Medium Onion, finely chopped,

1/2 cup chopped walnuts,

2 tablespoons fresh ginger, peeled and finely chopped, 2 tablespoons coarsely chopped fresh cilantro and 1/4 teaspoon salt. Mix thoroughly.

Pack into canning jars and keep refrigerated.  Serve with corn chips or other scoopable chip.

One recipe makes about one quart of salsa.

If you’re going to give these as gifts, you might want to label your jars.

Googling ‘Vintage Apple Labels’ returned tons of images.  I eventually decided on this image and just added the ‘Salsa’ lettering in my photo editor. If I was actually going to give these as a gift I might take the time to edit out the ‘S’ in apples.

I don’t know if you remember my chalk painted mason jars that I originally shared with you over at My Repurposed Life. Super easy to recreate the look…2 coats of chalk paint then lightly sand the raised edges.  Since I used most of my quart jars on that project I saw no harm in borrowing them back for a short time.

If it lasts that long, I may just have to serve the salsa while entertaining over the holidays.
